Football Saturdays are usually filled with wings, burgers, chips and plenty of heavy game-day favorites. But what if you could bring something a little lighter, brighter and more tropical to your next tailgate?
On this week’s edition of Skye’s Tailgate, a weekly segment on Game Runs Deep with Sudu Upadhyay, Atlanta food expert and personality, Skye Estroff joins host Sudu to prepare Rainbow Warrior Salsa, a fresh pineapple-based dip inspired by the Hawaii Rainbow Warriors.
Combining sweet pineapple with red onion, bell pepper, jalapeños, cilantro, garlic and fresh lime juice, this recipe delivers a combination of sweet, savory and spicy flavors.
Best of all, it’s easy to customize depending on how much heat you like.
How to Pick and Cut a Fresh Pineapple
Before getting started with the salsa, Skye shares a few helpful tips for selecting and preparing a fresh pineapple.
For anyone who’s ever struggled to determine whether a pineapple is ripe, Skye recommends gently pulling one of the interior leaves from the crown. If it comes out easily, that’s her preferred indicator that the pineapple is ready.
Once you’ve selected your pineapple, it’s time to prepare it.
Skye starts by cutting off the top and bottom, then slicing away the tough outer skin.
Next, she cuts the pineapple in half and removes the fibrous core before chopping the remaining fruit into small pieces.
The result is a fresh pineapple base that’s ready to absorb the flavors of the other ingredients.
Rainbow Warrior Salsa Recipe
Ingredients
- 1 fresh pineapple, peeled, cored and diced
- Up to ½ red onion, finely diced
- 1 red bell pepper, diced
- 2 jalapeños, finely diced
- 2 cloves garlic, minced
- Fresh cilantro, chopped to taste
- Juice of at least 2 limes
- Sturdy corn chips for serving
Instructions
Step 1: Prepare the pineapple
Remove the pineapple’s crown and bottom. Carefully slice away the outer skin, cut the fruit in half and remove the tough center core.
Dice the remaining pineapple into small, bite-sized pieces and transfer it to a large mixing bowl.
Step 2: Add the vegetables
Finely dice the red onion and add it gradually, adjusting the amount to your preference.
Add the diced red bell pepper, followed by the finely chopped jalapeños.
Skye recommends cutting the peppers into small pieces so their heat is evenly distributed throughout the salsa.
Step 3: Add garlic and cilantro
Mix in two cloves of minced garlic and a generous amount of fresh cilantro.
The cilantro adds another layer of freshness that complements the pineapple and peppers.
Step 4: Squeeze in the lime juice
Add the juice of at least two fresh limes.
The acidity helps balance the sweetness of the pineapple and brings the different flavors together.
Step 5: Mix and serve
Stir all the ingredients until evenly combined.
Serve with a sturdy corn chip capable of scooping up the pineapple and vegetables. Skye recommends a hearty corn chip, while Sudu opts for Fritos Scoops.
Make It Your Own
One of the best things about Rainbow Warrior Salsa is how easily it can be customized.
During the segment, Sudu admits he’d probably add another two jalapeños to turn up the heat.
Skye also suggests adding avocado for a creamy twist, while black beans emerge as another possible addition.
The recipe is flexible enough to work as a traditional dip or as a colorful addition to a larger game-day spread.
A Fresh Alternative for Football Saturdays
While many tailgate recipes lean toward rich, heavy ingredients, Rainbow Warrior Salsa offers something different without sacrificing flavor.
The pineapple brings natural sweetness, the jalapeños add heat, the lime delivers acidity and the fresh vegetables provide texture and crunch.
As Skye explains during the segment, the dish doesn’t feel like a compromise simply because it includes fresh produce.
Instead, it delivers a bright combination of flavors that can stand alongside traditional football favorites.
And with its colorful presentation, it’s also an attractive addition to any tailgate table.
Whether you’re cheering for the Hawaii Rainbow Warriors or simply looking to switch up your Saturday menu, this tropical-inspired salsa is worth adding to your game-day rotation.
